Chole Kulche Homestyle

Chick Peas are very popular in India, we eat it with a wide variety of breads, rice and just plain too. I made Kulche, with wholewheat and semolina to serve with Chole.

For Kulche take semolina and wholewheat flour in ratio of 1:1, add oil, salt and curd, knead into flour. Keep aside for 5-6 hrs. Flour will rise and become softer. Roll out small round rotis and make kulche with ghee on a thick bottomed pan.

For Chole, take a cup of chick-peas soak for 5-6 hrs. Boil and keep aside. Take 2 potatoes and 1 small onion, cut in thick pieces. In a pan add 3 tbsp oil, fry potatoes and onions in it, drain and keep aside. In same oil add a tsp of grated ginger, 1 tsp of finely cut chillies and then chole. Stir and add 2 tsp of coriander powder, 2 tsp of roasted jeera powder, ½ tsp chilly, ½ tsp garam masala and salt to taste. Add fried potatoes and onions, 2 ½ glasses of water, cover and let it cook till water evaporates and oil can be seen on top.

Serve garnished with tomatoes and coriander, masala onion by side and drizzle tamarind chutney. I also added a jaljeera made with fresh mint to sip!
